1 ½ pounds potatoes
olive oil
dried or fresh herbs (rosemary, basil, sage, thyme)
salt and fresh pepper
fresh garlic cloves (optional)
cooking spray
Preheat the oven to 425 degrees. Scrub the potatoes and cut
them into one inch chunks. Combine them with about a tablespoon of
olive oil, one to two teaspoons of chopped herbs, fresh pepper and
salt and a few garlic cloves. Toss well to coat. Roast them in a
shallow pan sprayed with cooking spray for 40 to 50 minutes or
until tender. Serve immediately. Serves four normal people or two
very hungry people.
