Grilled Maine Cod Packets
1 medium onion, chopped
2 medium sized boiled potatoes
1 pound Maine codfish (cut into four, four-ounce pieces)
4 tablespoons pesto
1 orange pepper, cut into julienne slices
Saute the onion in a little olive oil or butter on top of the
stove until it is translucent and set aside. Scrub the potatoes
(no need to peel them) and boil them in water until they are just
fork tender. Remove from the water and cool in the refrigerator.
When they are cool enough to handle, slice them into rounds.
Portion the codfish into four-ounce portions. Wash and seed the
orange pepper and cut into julienne slices.
To prepare the packets:
Cut four pieces of aluminum foil into 10 inch by 14 inch
pieces. On each piece of foil, layer the sauteed onion, a potato
slice, the four-ounce piece of codfish. Spread a tablespoon of
pesto over the fish, then top with some pepper slices.
Fold the edges of the packet so that it is sealed.
Cook on top of the grill, in preheated 350 degree oven or over
a steam pipe for about 12 to 15 minutes, depending upon the
thickness of the fish. The fish should just start to flake when it
is cooked through. Remove the packets from the heat and serve with
green beans.
